Inspired by the low-sugar food movement, but based on the idea that some natural sweetness won’t do any harm to your body, the Fu Wan’s crew knew they wanted more - or maybe they wanted less. They reduced the classic 70/30 cacao/sugar proportion down to the lowest possible percentage of cacao solids when chocolate still has sweetness. The result? Tasty, healthy, and damn good-looking 85% dark chocolate for healthy people.
As the climate changes during the harvesting and fermentation seasons, each batch of chocolate will have a slight flavour difference, which continues to develop with maturation, which is absolutely normal.
