Feliu Chocolate is a dedicated journey into the world of Mexican cocoa, exploring its diverse varieties, origins, and unique aromas.
Its' approach begins right at the cocoa farm, where they meticulously handpick each bean, processing it according to its distinct characteristics. Factors such as genetics, cultivation methods, bean size, and even the time of year play a pivotal role in their selection process. To ensure the finest aromatic profiles for each variety, they rigorously test each batch and adjust their processing methods accordingly.
Currently, Feliu's focus is exclusively on Mexican cocoa, primarily sourced from the regions of Chiapas and Tabasco. The maker establishes direct relationships with local producers, making regular visits to their farms. The brand's processing takes place in Guadalajara, Jalisco, where its' small-scale factory and retail outlet are situated.
The name of the visionary behind this project is Victor Feliu. While he currently calls Guadalajara his home, his roots trace back to Valencia, Spain. Since 2014, his journey has been intertwined with cocoa projects spanning both the Americas and Europe. Feliu Chocolate emerged from a passionate obsession, transforming it into a way of life. Feliu's mission is to shed light on a product often misunderstood by the public and to rekindle Mexico's rightful claim as the 'chocolate country.'
Feliu Chocolate had its humble beginnings in the Santa Tere neighbourhood of Guadalajara. It started as a single room in an ageing apartment and gradually evolved into a small workshop nestled near the local market. Today, the maker proudly operates from a dedicated space near Expo Guadalajara, boasting a team of devoted employees and a warm-hearted community of customers and suppliers that stretches beyond the city's borders.
