STORY

Chocolate Sierra Sagrada was conceived by biologist Marco Caraballo Pérez and industrial microbiologist Andrea Díaz Ovalle, co-founders of C & D CACAO SAS, a Colombian company that owns the brand. Their passion for chocolate dates back to their childhood, and their journey led them to fall deeply in love with the Sierra Nevada de Santa Marta and its exquisite cocoa.

Situated in Santa Marta, Magdalena department, in northern Colombia, our company is wholly dedicated to producing and promoting premium, high-quality dark chocolate. The heart of our cocoa beans lies in the Sierra Nevada de Santa Marta, the tallest coastal mountain range in Colombia and the world's fifth-highest peak. Recognized as a UNESCO Biosphere and Man Reserve, this region houses the Sierra Nevada National Natural Park, alongside the adjacent Tayrona National Natural Park. Both areas boast rich biodiversity, home to numerous endemic species of flora and fauna and have served as a sanctuary since the Pleistocene era.

Additionally, this sacred land is home to four indigenous communities – the Arhuacos, Koguis, Wiwas, and Kankuamos. They have been the stewards of this natural treasure for millennia, preserving and protecting its riches. They express gratitude to Mother Earth through spiritual offerings, including cocoa, which has resulted in the cultivation of white cocoa, known as "bunsi" in the Iku language. This Criollo variety is characterized by its delicate, less bitter, and aromatic notes, adding enchantment to our chocolates.

Our company plays a vital role in enhancing the quality of life for small-scale producers. We achieve this by direct and fair purchases of select, high-quality cocoa lots during each harvest. Our commitment to the bean-to-bar concept is evident at every step, from farm visits and manual grain selection to the meticulous hand-wrapping of our luxurious products. We firmly believe that cocoa and chocolate have the power to positively impact rural life, fostering an appreciation for the natural, cultural, and social values of this mountainous paradise. This approach promotes harmonious development within the region, peace, continuity, and opportunities for future generations, all while strengthening our commitment to the irreplaceable "Heart of the World" on our planet.

The Sierra Sagrada process begins with visits to cocoa farms and collection centers, where beans are meticulously processed. Batches meeting stringent quality standards are purchased directly from the Arhuaco indigenous community at a fair price, often exceeding what other buyers offer competitively. The cocoa, initially obtained as dried beans, undergoes processing that adheres to the highest chocolate-making standards. It is then transformed manually into pure dark chocolate bars, available in 64%, 72%, and 85% cocoa content. Each bar carries a unique taste that mirrors the distinct flavors of this mountainous haven. If you're curious about how cocoa content can influence your chocolate's flavor, our collection is an exploration you won't want to miss.
