Story

The north of Thailand is an agricultural treasure for the country. It is mountainous landscape and higher latitude allow for crops unique to the region of Thailand such as strawberries, cherry flowers, and a thriving Arabica coffee production.

25% of the proceeds from the sales of this bar will go to The Warm Heart Foundation to help with their efforts to reduce the burning of crops causing hazardous air throughout the North of Thailand.

Kad KoKoa is a premium bean-to-bar chocolate, founded by 2 lawyers, Paniti and Nuttaya in Thailand. They source beans directly from Thai farmers around Thailand. The team is attentive in the entire process of selecting, fermenting and drying beans to ensure we can represent the best flavours and aroma of Thai cacao when making into chocolate or as cacao beans. Kak Kokoa signifies a commitment to the environment and to the beautiful ecosystems of Thailand. They believe in Thai bean-to-bar chocolate, and we hope to bring the awareness of Thai cacao and chocolate to the global arena.

This very fragrant chocolate is made with beans from Peru, more precisely from the region around the Ucayali River. This is a region that has been awarded several times at the International Chocolate Awards, but which remains little known to the general public because, despite the quality of these beans, production is still very limited today. The reason is that the coca plantation there eclipsed that of the cocoa for several years. Working with USAID and Alianza Peru to provide a more profitable alternative to the cocaine market, operator Ucayali River Cacao collects and processes quality beans from a collective of nearly 400 smallholder farmers.  

This line of chocolate products reflects Chaleur's concern for quality and transparency at all stages of production. Their particular touch lies in their choice to bet on the typical aromatic profile of a given terroir.   

Note that nothing has been added to the chocolate and that the fruit flavours you will taste come directly from the bean.

Not too sweet

Not too sweet and you can taste the chrysanthemum in each bite.

Subtle but lovely chrysanthemum flavor

It took me half the bar to finally detect the chrysanthemum flavor. The quality of the chocolate itself is so good and the chrysanthemum is very natural, it's nice that is doesn't have any kind of overpowering or artificial taste.
