Crafted in Santa Marta, Colombia, the artisan behind this exceptional chocolate specializes in producing small-batch, single-origin bean-to-bar chocolate, using the esteemed Criollo (Creole) cacao, harvested from the highest intertropical coastal peak on the planet, renowned for its rich biodiversity and cultural significance.

The Sierra Nevada, due to its unique geographical location, holds a sacred place in the hearts of various indigenous tribes, including the Arhuacos, Koguis, Wiwas, and Kankuamos, who revere the land as sacred, offering gratitude to Mother Earth for precious crops such as cocoa.

Sierra Sagrada's journey begins by visiting cocoa farms and collection centers, where beans undergo rigorous quality assessments. They practice a direct purchase approach from the Arhuaco indigenous people, ensuring a fair price that often exceeds competitive market rates. The cocoa arrives in the form of dried beans, meticulously processed in accordance with the highest standards of chocolate-making, then handcrafted into pure dark chocolate bars boasting a rich 55% cocoa content.

In the refining process, cocoa nibs are carefully reduced in size, enhancing their texture, fluidity, and eliminating any residual acidity. This gradual transformation reveals the native aroma and distinctive flavors of Sierra Nevada cocoa. Our chocolate makers proudly refrain from using any artificial stabilizers or preservatives in their products, making their creations more temperature-sensitive compared to other premium chocolates.

To ensure the optimal taste experience, it's advisable to store our chocolates in a cool, dry place where the temperature hovers between 16°C and 18°C. Please refrain from refrigerating our chocolates, as this may cause sugar crystallization due to increased humidity, altering their texture and flavor.

On the contrary, if stored in excessively high temperatures, cocoa butter may separate and form a white film on the chocolate's surface. This loss of cocoa butter can lead to the chocolate drying out and, consequently, a potential alteration in flavor. Your mindful storage practices will help preserve the integrity of our delectable chocolates.
