Origin & Craft
This chocolate was awarded a Gold Medal in its category at the finals of the International Chocolate Awards 2025 and became one of four overall global winners.
The bar is the result of a collaboration between chocolate makers Steiner & Kovarik and Pavel Sapík, a Czech chef known for innovative cuisine grounded in Czech gastronomic tradition.

Pavel Sapík built a long culinary career marked by leadership at Terasa u Zlatá studně, which became one of Prague’s top restaurants under his direction, as well as international experience in Austria, France, and Sweden, including work at Frantzén. He now leads the family restaurant U Sapíků, continuing the culinary legacy of his father, Jaroslav Sapík, while integrating his own techniques and ideas.

The recipe translates Sapík’s dessert—a tartlet with strawberries and asparagus—into chocolate form, combining white chocolate with asparagus, strawberries, and tarragon, topped with black currant and grenadine. Each bar is created with careful attention to balance and sensory expression.

Flavor Profile
Fresh and unconventional. Asparagus provides a surprising base with light spiciness and green freshness. Freeze-dried strawberries and black currant introduce bright, pleasant acidity, while grenadine adds an exotic fruit dimension. Tarragon and red orange underline and balance the composition, bringing aromatic cohesion.

Tasting & Pairing Guide
Best enjoyed slowly to follow the progression from vegetal freshness to layered fruit acidity and herbal lift. Suitable on its own or alongside neutral beverages that allow the complexity to unfold without interference.

Summary
An award-winning white chocolate that merges haute cuisine and chocolate craftsmanship. Inspired by Czech culinary tradition and seasonal asparagus, this bar offers an artistic, carefully balanced sensory experience shaped by Pavel Sapík’s culinary vision.

cocoa butter, semi-skimmed milk powder, coconut sugar, freeze-dried black currant, freeze-dried strawberries, freeze-dried asparagus (2.1%), aroma: natural orange, natural tarragon, natural vanilla. Content of cocoa components at least 40%. Store in a cool and dry place. Made by hand in the Czech Republic

Our chocolate makers proudly refrain from using any artificial stabilizers or preservatives in their products, making their creations more temperature-sensitive compared to other premium chocolates.

To ensure the optimal taste experience, it's advisable to store our chocolates in a cool, dry place where the temperature hovers between 16°C and 18°C. Please refrain from refrigerating our chocolates, as this may cause sugar crystallization due to increased humidity, altering their texture and flavor.

On the contrary, if stored in excessively high temperatures, cocoa butter may separate and form a white film on the chocolate's surface. This loss of cocoa butter can lead to the chocolate drying out and, consequently, a potential alteration in flavor. Your mindful storage practices will help preserve the integrity of our delectable chocolates.
