Kankel is committed to terroir. Going beyond soil, climate and topography, collective wisdom results from the work of people with the natural environment which give those original products their distinctive characteristics. The goal is to bring you on a memorable trip to the places of their origin. The essence of each territory is reflected in cacao beans that are transformed, without any unnecessary intervention, into a bar in which the variety and the elaboration process are manifested without artifice.

The slight bitterness and the touch of tropical acidity are reminiscent of passion fruit with nuts. The notes med us fall in love with this bar. Its marbling colour is evidence of the fact that the beans were cultivated in between the snow-capped mountain ranges of Mountaln and the Titicaca plateau, an idyllic place where the Chuncho variety comes from. A fina traveller's note: it is still used today by indigenous Matsiguenga people as an exchange currency.

Our chocolate makers proudly refrain from using any artificial stabilizers or preservatives in their products, making their creations more temperature-sensitive compared to other premium chocolates.

To ensure the optimal taste experience, it's advisable to store our chocolates in a cool, dry place where the temperature hovers between 16°C and 18°C. Please refrain from refrigerating our chocolates, as this may cause sugar crystallization due to increased humidity, altering their texture and flavor.

On the contrary, if stored in excessively high temperatures, cocoa butter may separate and form a white film on the chocolate's surface. This loss of cocoa butter can lead to the chocolate drying out and, consequently, a potential alteration in flavor. Your mindful storage practices will help preserve the integrity of our delectable chocolates.
