The World's Best Milk Chocolate 2023

Ranked in the Top 100 Chocolates in the World.

Origin & Craftsmanship
This bar comes from Chaleur B Chocolat, a Canadian craft chocolate maker based in New Brunswick. Known for their artisanal approach to bean-to-bar chocolate, they use thoughtfully sourced cacao and small-batch methods to highlight both flavour and texture. The 51% Milk embodies a classic, smooth milk chocolate experience with refined balance.

Flavor Profile
As a 51% milk chocolate, this bar is creamy and inviting with gentle cocoa richness. Expect notes of toffee, caramel, and sweet vanilla, with comforting dairy undertones and a soft, velvety finish. It’s approachable yet nuanced — richer than typical commercial milk chocolate while remaining smooth and easy to enjoy.

Tasting & Pairing Guide

Let the chocolate melt slowly to experience its creamy texture and layered sweetness — from subtle caramel to light vanilla accents.
Pair with a light, fruity red wine like Beaujolais or a chilled rosé to enhance the milky sweetness with complementary fruit tones. For a non-alcoholic option, try a gentle black tea (such as Darjeeling) or a nutty chai that echoes the toffee and spice notes. Food pairings like fresh berries, shortbread cookies, or lightly buttered toast highlight the bar’s creamy and sweet character.

Summary

The Milk 51% bar by Chaleur B Chocolat is a classic milk chocolate done with craft and depth. Its creamy richness and subtle sweet notes make it an accessible treat that still carries the nuance and quality of artisan chocolate — perfect for everyday indulgence or pairing with light beverages and snacks.

Chaleur B Chocolat, the artisanal chocolate manufacturer, prides itself on being intimately involved in the entire chocolate-making journey, from the cocoa bean to the final delectable bar. Since 2008, their passion has driven them to import and carefully select raw cocoa beans, embarking on a meticulous process that spans from roasting the beans to crafting "bean-to-bar" chocolate bars, which involves crushing, winnowing, liquor creation, chocolate production, conching, and tempering.

This arduous and intricate process demands an abundance of love, patience, and unwavering dedication, as the creation of a single chocolate bar can extend over a span of up to seven working days. Not content with merely making chocolate, Chaleur B Chocolat also delves into the world of pastries and confectionery.

With a team of exceptional pastry chefs, they aspire to elevate indulgence and creativity to new heights. Their aim is to continually push the boundaries of what is possible in the world of chocolate, and their extraordinary creations, led by talents such as Frédérike Bélair and Joëlle Hamelin, promise to take your taste buds on a heavenly journey of flavors.

The introduction of their pastry and confectionery studio serves as a platform to test their chocolates and embark on the creation of desserts that are not only exceptional but also 100% original. Their shared passion for chocolate unites a diverse group of individuals, each with origins as varied as the regions that produce chocolate.

When you explore their offerings, whether on their website or in their physical store, you can be assured of quality products that come with a commitment to transparency at every stage of manufacturing. Established and unyielding in their pursuit of excellence, Chaleur B Chocolat allows no compromises in the creation of their chocolates and confections.

Their quest for the finest origins of cocoa takes them on a journey that spans from Central America to South America, extending even to Africa and Asia, in search of flavors that capture the essence of the terroirs. Furthermore, they prioritize equitable and fair transactions, ensuring that producers and creators are treated justly and benefit from their shared endeavors.

To achieve chocolates with unique and unmistakable aromatic profiles, Chaleur B Chocolat carefully selects and imports the finest green and raw cocoa beans. The precision of their master roaster, @Mathieu Claude Labrecque, sets the tone with expertly roasted beans, and then their chocolatier, Tania Leclerc, meticulously oversees every stage of creation. The result is a range of tasting chocolates that stand out for their exceptional and distinctive flavors.

Keep in a cool, dry place, away from direct light and strong odors. Store at maximum18 ° C in its original packaging

Our chocolate makers proudly refrain from using any artificial stabilizers or preservatives in their products, making their creations more temperature-sensitive compared to other premium chocolates.

To ensure the optimal taste experience, it's advisable to store our chocolates in a cool, dry place where the temperature hovers between 16°C and 18°C. Please refrain from refrigerating our chocolates, as this may cause sugar crystallization due to increased humidity, altering their texture and flavor.

On the contrary, if stored in excessively high temperatures, cocoa butter may separate and form a white film on the chocolate's surface. This loss of cocoa butter can lead to the chocolate drying out and, consequently, a potential alteration in flavor. Your mindful storage practices will help preserve the integrity of our delectable chocolates.
