Origin & Craft
This white bean-to-bar chocolate is crafted using cocoa butter as a base and combined with oyster mushrooms, chosen for their beneficial properties and umami character. A small amount of high-quality organic orange essential oil is added to bring freshness and aromatic lift.
The chocolate is made from high-quality organic cacao beans of the ancient Criollo variety and the Trinitario hybrid variety, grown on a family farm in Colombia. It is sweetened with coconut sugar.
The oyster mushrooms used in this bar are grown in the Czech Republic. The creation of this chocolate was supported by the ZEŠ program (project QK1910209) following a call from VSCHT and CZU.
This bar has received multiple European and world awards, including Great Taste and Chocolate Awards recognition.

Flavor Profile
Aromatic and layered. Notes of orange lead, followed by caramel, hazelnut, honey, cream, and a distinctive savory umami character from the oyster mushrooms.

Au contraire, s'il est conservé à des températures trop élevées, le beurre de cacao peut se séparer et former un film blanc à la surface du chocolat. Cette perte de beurre de cacao peut entraîner un dessèchement du chocolat et, par conséquent, une altération potentielle de sa saveur.
