Origin & Craftsmanship
Cuzco 80% is made by Cacaosuyo using the rare, native Chuncho cacao beans from the Urubamba Valley in the lower Cuzco region of the Peruvian Andes, near Machu Picchu. This area is known for housing many native cocoa varieties, which Cacaosuyo helps preserve through direct trade practices and careful attention to the entire "tree-to-bar" process. The bar is minimally processed at origin in Peru to express the unique genetics of this heirloom cocoa strain.

Flavor Profile
Despite its high cocoa content, this bar is known for being naturally sweeter and less bitter or astringent than most 80% chocolates. Tasting notes start with a slight fruitiness, including hints of red fruit or citrus, which then slowly fades into a lingering fresh, herbal finish. Other reviewers have noted hints of pineapple, hay, and a unique "buttery melty texture".

Tasting & Pairing Guide
Let a small square melt on your tongue to appreciate its subtle complexity. Note the initial sweet fruity notes as they fade into the unique, long-lasting herbal finish.
  • Complementary Pairings: Try pairing with fortified wines like sherry or vermouth, or other dessert wines such as Madeira or Port.
  • Contrast Pairings: Pair with barrel-aged spirits like whiskey or rum.
Summary
Cuzco 80% is an award-winning (World Gold at the International Chocolate Awards 2020-2021) and highly refined bar that showcases the unique potential of Peru's native Chuncho cacao . Its mild fruit and distinct lingering herbal notes make it a unique and complex experience, ideal for dark chocolate lovers seeking depth and a surprisingly sweet character in a high-cocoa bar.

18 ° C in its original packaging
