Prague Chocolate keeps the recipe deliberately short, cocoa beans and cocoa butter sweetened only with low-glycaemic coconut sugar, then does the slow work in their own workshop: gentle roast, stone milling, no alkalisation, no palm oil, and a long conche that softens the bar without stripping the origin out of it.
