The house bar — a blend of Southern Mexican cacaos. Classic, fudgy, comforting.

Above-the-fold callout
Every great chocolate maker has a house bar, and this is Sleep Walk's. "Barra de la Casa" is their permanent, always-available flagship — a blend of cacaos from Southern Mexico built to taste like the dark chocolate most people picture in their heads: smooth, balanced, low in acidity, and full of fudgy, nutty comfort. Just two ingredients, hand-tempered in Chicago. The bar to start with, and the one you'll keep coming back to.

Origin & Craftsmanship
Rather than chase a single dramatic origin, Sleep Walk built this one as a considered blend of Southern Mexican cacaos — including beans from growers like Don Tito Jiménez and family — chosen to complement each other into something classic and welcoming. The maker likens it to Love Supreme, the house espresso blend from their parent company, Dark Matter Coffee: familiar, dependable, quietly excellent. It's made the same painstaking way as the rest of the range — cacao and sugar in a 70/30 ratio, no stabilisers or preservatives, hand-tempered bowl by bowl on granite and wrapped in original artist-designed sleeves. Approachable in flavour, uncompromising in method.

Flavor Profile
Fudgy, nutty and easy to love. The low-acidity Southern Mexican cacao gives a rounded, comforting base, layered with the tasting notes reviewers keep returning to: vanilla bean, banana bread and pecan. Nothing sharp, nothing challenging — just deep, satisfying, classic dark chocolate flavour done properly. The definition of a crowd-pleaser, and a genuine gateway into craft chocolate.

Tasting & Pairing Guide
Because it's so balanced, this one goes with almost anything — and fittingly, it's at its best beside a good cup of coffee, given the maker's roots. The banana-bread and pecan notes make it lovely with a glass of milk, a nutty brown ale, or an aged rum, and it's the ideal bar for baking or melting if you want craft-quality chocolate in a dessert. Let a square melt slowly and the vanilla comes forward on the finish. Keep it cool — around 15–21°C — as it carries no stabilisers.

Summary
The Barra de la Casa 70% is Sleep Walk's calling card: a thoughtfully blended, two-ingredient Southern Mexican dark that tastes exactly the way great classic chocolate should — fudgy, nutty, comforting, and made by hand in Chicago with real care. Vanilla, banana bread and pecan, and not a rough edge in sight. The easiest recommendation in the range, and a perfect first bar.

Keep in a cool, dry place, away from direct light and strong odors. Store at maximum
18 ° C in its original packaging

Our chocolate makers proudly refrain from using any artificial stabilizers or preservatives in their products, making their creations more temperature-sensitive compared to other premium chocolates.

To ensure the optimal taste experience, it's advisable to store our chocolates in a cool, dry place where the temperature hovers between 16°C and 18°C. Please refrain from refrigerating our chocolates, as this may cause sugar crystallization due to increased humidity, altering their texture and flavor.

On the contrary, if stored in excessively high temperatures, cocoa butter may separate and form a white film on the chocolate's surface. This loss of cocoa butter can lead to the chocolate drying out and, consequently, a potential alteration in flavor. Your mindful storage practices will help preserve the integrity of our delectable chocolates.
