It starts from the same considered foundation as the house bar: a blend of Southern Mexican cacaos, chosen to taste classic and approachable, made to a simple 70/30 cocoa-to-sugar ratio with no stabilisers or preservatives. From there Sleep Walk add just two spices — cinnamon and cayenne — folded into the chocolate rather than dusted on, so the warmth and the heat run all the way through. Everything is hand-tempered bowl by bowl on granite and wrapped in original artist-designed sleeves. A spiced bar built on a properly good chocolate base, which is what separates it from novelty heat.

The comforting, low-acidity house chocolate lands first — fudgy, nutty, familiar — then the cinnamon blooms with its warm baking-spice sweetness, and finally the cayenne arrives, a heat that doesn't shock so much as build and linger.
