A fruity, complex salted dark chocolate to end all salted dark chocolates. Made with single origin cacao from Zorzal Cacao, a farm and fermentary within a bird sanctuary in the Dominican Republic, and sprinkled with Peruvian pink salt sourced from Salt of The Earth Co. We think New York Magazine said it best: this bar has a “deep, dark, mysterious flavor with hints of cherry; and a finish as long as a David Foster Wallace footnote.”

The word "raaka "is Finnish and it means "raw". Despite the name, the company doesn't have any Finnish origins or connections, but the cadence of the word and its meaning capture the essence of chocolate and the process of it's making. When Raaka's people make chocolate they're after something that feels the way Raaka sounds: strong, wild, playful, and most of all, different.
It's my first time trying out raw chocolate and I don't think it's my kind of thing. Generally, I prefer smoother texture for my chocolates and this had a more grainy mouthfeel for me.
But, if you like raw chocolate and sea salt, yes, I think this would be up your alley. Can visibly see the sea salt on the chocolate upon opening.
Chocolates were packed in a foil bag which most certainly prevented them from melting. Same day delivery was prompt and efficient.
I had high hopes, with the excellent Mast chocolate, also from Brooklyn, as the yardstick. Raaka certainly carries all the socially approved marketing credentials: bean to bar, transparent trading etc. But these hardly matter
when the few varieties I sampled —pink sea salt; bananas foster;
ginger snap; coconut milk — were so tasteless they were near interchangeable.
Among the 7 Raaka chocolate that I've tried at The Providore, I like the Pink Sea Salt one best. Just ordered 2 bars.
