What is Nano_Lot?

This is the famous Nicaraguan variety with which Naive has been connected to via various scenarios during their chocolate making path. Pod: Trinitatio-Acriollado variety mainly originating from the Nothern Highlands of Nicaragua, analyzed by geneticist as possible grandfather to the Criollo trees in Venezuela's famed valleys of cocoa. This variety can be recognised phenotypically by its orange reddish smooth surface and moderate size.
Bean: This cocoa contains 20% of white beans and the rest is purple or lilac in colour. This special batch is 785 kg of total volume and is fermented as a single lot in cascade boxes and sun-dried for 7 days on wooden platforms.
Flavour: Initial taste of fresh apples and cherries followed by honey and a little bit of dairy notes that appear in a few seconds of time.
Aftertaste: Initial punch is followed by lingering chocolate aftertaste for almost 9 minutes.
Quality: This is a well-executed chocolate with just a subtle touch of astringency and bitterness in the very end. It is medium fat and quite punchy product without noticeable off-flavour characteristics.
