This is the famous Nicaraguan variety Domantas Uzpalis have been connected to via various scenarios during his chocolate maker career. Pod: Trinitario hybrid mainly originating from the Nothern Highlands of Nicaragua, analyzed by geneticists as possible grandfather to the Criollo trees in Venezuela's famed valleys of cacao. Recognized by its typical rough exterior and orange colour, this natural ruby got awarded with the Cocoa of Excellence Award of 2015.
Bean: The cocoa contains 20% of white beans and the rest is purple or lilac in colour. This special batch is 1048 kg of total volume and is fermented as a single lot in cascade boxes and sun-dried for 7 days on wooden platforms.
Flavour: Initial taste of ripe strawberries and wheat beer followed by kiwi fruit tones and subtle leather aroma, with a sparkling sensorial feel in the back of the throat and on the side of the tongue.
Aftertaste: Slim film of chocolate covers the tongue for around 5 minutes.
Quality: Spectacular quality profile with a negative presence of bitterness or astringency, although has a specific characteristic in its aroma and flavour.
