Santiago Perlata, the founder of Ecuadorian Pacari Chocolate, never attended any chocolate schools. But despite the fact, Pacari chocolate was recognised as Word’s Best Chocolate for five consecutive years. Paradoxically his lack of formal training in chocolate making allowed the company to step beyond industry “standards” and to invent “a method that creates better chocolate”. Today Pacari successfully fights the bias that “star” chocolate can be produced only by Swiss or Belgian. The fact is proved by more than 160 international awards including absolute domination of International Chocolate Awards (aka chocolate Oscar) in London. Pacari revolutionised Ecuadorean chocolate making sector with fair trade practices and biodynamic agriculture techniques. Pacari chocolate is free of soy, dairy, gluten, chemical or transgenic ingredients.
